Moroccan Carrot Salad

This salad dish is easy to prepare, delicious and very Moroccan!
Ingredients
1 lb fresh carrots - sliced into about 1/8" slices
4 T olive oil or vegetable oil
2 cloves garlic, partially crushed
2 T lemon juice
2 T chopped fresh cilantro
1/2 t salt
1/2 t cumin
1/2 t paprika
1/4 t hot paprika or red chili powder (harissa is the Moroccan spice mix for this ingredient)
Preparation
Boil the carrots in salted water just until slightly tender. Don't overcook. Drain and cover with cold water to stop furher cooking. Set aside.
In a medium skillet, gently saute garlic and olive oil over low heat for 2 or 3 minutes. Discard the garlic and add the carrots, lemon juice, cilantro and spices. Saute over low heat for another two minutes, and remove from heat.
Serve chilled or warm.
